Ingredients:
- 1 lb ground beef
- 1/2 lb ground pork
- 1 cup fresh spinach, chopped
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 egg
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 8 oz mozzarella cheese, cut into small cubes
- 2 tbsp olive oil
Instructions:
Preheat the Oven:
1. Preheat your oven to 375ยฐF (190ยฐC).
Prepare the Meatball Mixture:
2. In a large bowl, combine the ground beef, ground pork, chopped spinach, breadcrumbs, grated Parmesan, minced garlic, egg, dried oregano, dried basil, salt, and pepper. Mix until well combined.
Form the Meatballs:
3. Take a small amount of the meat mixture and flatten it in your hand. Place a cube of mozzarella cheese in the center and wrap the meat mixture around it, forming a ball. Repeat until all the meat mixture is used.
Cook the Meatballs:
4. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the meatballs and cook until browned on all sides, about 5 minutes.
Bake the Meatballs:
5. Transfer the skillet to the preheated oven and bake the meatballs for 15-20 minutes, or until fully cooked through and the cheese is melted.
Serve:
6. Remove from the oven and let the meatballs cool for a few minutes before serving. Garnish with additional chopped spinach or Parmesan cheese if desired.
