Mini Pineapple Upside Down Cheesecakes

 

Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 (8-ounce) packages cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 can (20-ounce) pineapple chunks, drained
- 1/4 cup caramel sauce

Directions:
1. Preheat Oven: 350°F (175°C). Line a muffin tin with paper liners.
2. Make Crust: Mix graham cracker crumbs and melted butter. Press into muffin cups.
3. Prepare Filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla.
4. Fill Cups: Divide filling among cups (3/4 full). Top with pineapple chunks.
5. Bake: 20-25 minutes, until set. Cool completely.
6. Serve:Drizzle with caramel sauce.

- Prep: 20 minutes
- Cook: 25 minutes
- Total: 45 minutes
