Low-Carb Cauliflower Salad Recipe

Ingredients:

- 1 head of cauliflower, steamed or boiled until tender, cut into bite-size pieces
- 6 boiled eggs
- Separate yolks into a bowl and mash
- Cut whites into small bite-size pieces
- 1/3 cup Miracle Whip or mayonnaise (do not use light, it has more carbs)
- 3 tablespoons mustard
- 3 tablespoons pickle relish
- 1/8 cup chopped onion (uncooked), adjust amount to preference
- Salt and pepper to taste

Instructions:
1. Mix all ingredients together.
2. Garnish with egg slices and parsley if desired.
3. Chill overnight for best flavor.
