Ingredients:
2 Eggs
1 Cup Milk
1 Cup Water
½ Teaspoon Vanilla Extract
¼ Cup Sugar
1 Tablespoon Baking Powder
¼ Teaspoon Salt
3 Cups All-Purpose Flour
Canola or Vegetable Oil for Frying
Powdered Sugar for Dusting
Instructions:
1. Prepare the Batter:
In a large bowl, whisk together 2 eggs.
Add 1 cup of milk, 1 cup of water, and ½ teaspoon of vanilla extract. Mix until well combined.
Stir in ¼ cup of sugar, 1 tablespoon of baking powder, and ¼ teaspoon of salt.
Gradually add 3 cups of all-purpose flour, whisking continuously until the batter is smooth and free of lumps.
2. Heat the Oil:
Pour canola or vegetable oil into a heavy skillet or deep fryer to a depth of about ½ to 1 inch.
Heat the oil to 375°F (190°C).
3. Fry the Funnel Cakes:
Transfer the batter into a funnel or a squeeze bottle.
If using a funnel, cover the spout with your finger before filling it with the batter. Carefully release your finger to drizzle the batter into the hot oil, creating a lacy pattern.
Fry each funnel cake for about 1-2 minutes on each side, or until golden brown. Use tongs or a slotted spoon to flip the funnel cake and remove it from the oil.
4. Drain and Serve:
Place the fried funnel cakes on paper towels to drain excess oil.
Dust with powdered sugar and serve warm.
