Cheesy Stuffed Potato Cakes 

Ingredients:

- 2 large potatoes, peeled and boiled

- 1 cup shredded cheddar cheese

- 1/4 cup chopped green onions

- 1/4 cup chopped cooked bacon

- 1/4 cup sour cream

- Salt and pepper, to taste

- 1/2 cup all-purpose flour

- 2 eggs, beaten

- 1 cup breadcrumbs

- Vegetable oil, for frying

 

Instructions:

 

1. Mash Potatoes:

- Mash the boiled potatoes in a mixing bowl until smooth.

 

2. Mix Ingredients:

- Add cheddar cheese, green onions, bacon, sour cream, salt, and pepper.

- Mix well to combine.

 

3. Shape Patties:

- Scoop about 2 tablespoons of the mixture and shape into patties.

- Repeat for the remaining mixture.

 

4. Coat Patties:

- Dredge each patty in flour, dip in beaten eggs, and coat with breadcrumbs.

 

5. Cook Patties:

- Heat vegetable oil in a skillet over medium heat.

- Fry patties until golden brown, about 3-4 minutes per side.

- Drain on paper towels.

 

6. Serve:

- Serve hot, garnished with extra chopped green onions and a dollop of sour cream.
