Blueberry Cottage Cheese Breakfast Bake

Ingredients:

  • 1 cup cottage cheese
  • 1/2 cup rolled oats
  • 1/2 cup fresh blueberries
  • 2 large eggs
  • 2 tablespoons honey or maple syrup (optional, for sweetness)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • Butter or non-stick spray for greasing

Instructions:

1. Preheat the Oven:

Begin by preheating your oven to 180°C (350°F). Lightly grease a small baking dish or oven-safe ramekins with butter or non-stick spray to prevent sticking.

2. Prepare the Mixture:

In a mixing bowl, combine 1 cup of cottage cheese and 2 large eggs. Whisk them together until smooth and well blended. The eggs will help bind the mixture, while the cottage cheese adds a creamy, rich texture that’s also high in protein.

Next, add 1/2 cup of rolled oats to the bowl. Stir them into the cottage cheese and egg mixture. Rolled oats will absorb moisture as the bake cooks, creating a tender, wholesome texture.

For natural sweetness, you can add 2 tablespoons of honey or maple syrup and 1/2 teaspoon of vanilla extract. These ingredients complement the tartness of the blueberries and balance the richness of the cottage cheese.

3. Add Flavorings:

Sprinkle in 1/4 teaspoon of ground cinnamon and a pinch of salt. The cinnamon adds a warm, aromatic note, while the salt enhances the other flavors. Also, stir in 1/4 teaspoon of baking powder to help the bake rise slightly and improve the texture.

4. Incorporate the Blueberries:

Gently fold in 1/2 cup of fresh blueberries. Blueberries provide a burst of natural sweetness and juiciness in every bite, as well as a boost of antioxidants and vitamins. Be careful when stirring to avoid breaking them too much, so they retain their shape while baking.

5. Bake:

Pour the mixture evenly into your prepared baking dish or divide it between two ramekins for individual servings. Smooth the top with a spoon or spatula.

Place the dish in the preheated oven and bake for about 25-30 minutes, or until the top is golden, the edges are set, and the center is firm. You can test the doneness by inserting a toothpick into the center — if it comes out clean, the bake is ready.

6. Serve:

Allow the Blueberry Cottage Cheese Breakfast Bake to cool for a few minutes before serving. This dish can be enjoyed warm or at room temperature. You can drizzle a little extra honey or maple syrup on top for added sweetness, or serve with a dollop of Greek yogurt for a creamy contrast.

Serving Suggestions:

  • Top with extra fresh blueberries and a sprinkle of granola for crunch.
  • Serve with a side of sliced banana, strawberries, or seasonal fruits.
  • Pair with a cup of coffee, tea, or fresh juice for a complete, satisfying breakfast.

Notes:

This recipe is not only easy and quick to prepare, but also rich in protein, fiber, and nutrients. It’s an ideal choice for a healthy breakfast or snack, providing energy and keeping you full throughout the morning. You can also customize the recipe by adding nuts, seeds, or other fruits such as raspberries or diced apples.
