- 500 g chicken breast, cut into bite-sized pieces
- 1 teaspoon powdered ginger
- 2 cloves minced garlic (separate into two portions)

- 1/2 teaspoon black pepper

- Sunflower oil for frying
- 70 g flour
- 40 g rice flour (or cornstarch)
- 1 good pinch of salt
- 120 ml water
- 1 tablespoon sweet pepper powder (paprika)
- 1 teaspoon hot pepper flakes
- 1 tablespoon brown sugar (or whole sugar)
- 2 tablespoons honey
- 3 tablespoons soy sauce (salty)
- 1 tablespoon oyster sauce (or nuoc mam)
- 1 tablespoon rice vinegar (or lemon juice)
- 1 to 2 tablespoons ketchup
- 3 tablespoons olive oil (or peanut/sesame oil)
- 2 cloves minced garlic (for sauce)
- 1 small glass of water (approximately 100 ml)
- Salt and pepper to taste
- Chopped green onion or coriander (for garnish)
- Crushed roasted peanuts or sesame seeds (for garnish)
Instructions:
1. Marinate the Chicken:
- In a bowl, combine the chicken pieces with powdered ginger, minced garlic, rice vinegar (or lemon juice), black pepper, and fine salt. Mix well and let marinate for at least 15 minutes.
2. Prepare the Coating:
- In a separate bowl, mix the flour, rice flour (or cornstarch), and a pinch of salt.
- Gradually add 120 ml water, whisking until you have a smooth batter.
3. Coat the Chicken:
- Dip each piece of marinated chicken into the batter, ensuring it is well-coated.
4. Fry the Chicken:
- Heat sunflower oil in a pan over medium-high heat.
- Fry the coated chicken pieces in batches until they are golden and crispy. Remove and drain on paper towels.
5. Prepare the Sauce:
- In a separate pan, heat olive oil (or peanut/sesame oil) over medium heat.
- Add minced garlic and cook until fragrant.
- Add sweet pepper powder (paprika), hot pepper flakes, brown sugar, honey, soy sauce, oyster sauce (or nuoc mam), rice vinegar (or lemon juice), ketchup, and 100 ml water. Stir well to combine and cook until the sauce thickens slightly. Adjust seasoning with salt and pepper if needed.
6. Combine Chicken and Sauce:
- Add the crispy chicken pieces to the pan with the sauce. Toss until the chicken is evenly coated and heated through.
7. Garnish and Serve:
- Transfer the coated chicken to a serving dish.
- Garnish with chopped green onion or coriander and sprinkle with crushed roasted peanuts or sesame seeds.
